Methods of Meat Packaging

Meat is a kind of food with rich nutrition and high water content, but some meat has a long shelf life, while others have a short shelf life. The length of shelf life is related to preservatives, moisture content in meat and processing methods, as well as operation and methods of meat packaging after sterilization. Generally, the lower the water content, the longer the meat will last.

1. Vacuum packing. vacuum packaging refers to the meat into the packaging bag, use vacuum packaging machine to vacuum the packaging bag, so as to isolate the air, extend the shelf life.
2. Vacuum skin packaging. This form of packaging uses an article instead of a packaging mold, and the package shape is the actual shape of the article. This packaging method has a good vacuum and can also inhibit the juice precipitated from the product, and the preservation effect is good. The package is available in both continuous and intermittent styles and is suitable for packaging ham, bacon, sausage, etc., and it can better reflect its advantages when packaging irregularly shaped meat products.

3. Inflatable packaging. This packaging typically uses a non-breathable film and is filled with inactive carbon dioxide or nitrogen. The role of this package is to prevent oxidation and discoloration of the meat. Delays the increase of oxidation-reduction potential and inhibits the reproduction of aerobic microorganisms.
4. Add deoxidizer. The effect is the same as other methods of meat packaging. In general packaging, even if the oxygen discharge, from the surface of the film will permeate some oxygen, so completely isolated oxygen is impossible. The function of deoxidizer is to absorb the oxygen into the packaging bag at any time, in order to maintain the oxygen concentration in the bag under the desired limit concentration, so as to prevent fading, oxidation, inhibit bacterial reproduction. This method with low cost, does not need vacuum and inflatable facilities, and is easy to operate and flexible.
